Food Service
My food service internship spanned two different sites: Dayton Children’s Hospital and Kettering Public Schools Administrative offices. At Dayton Children’s I worked in the kitchen to develop new culturally diverse and vegetarian friendly recipes and menus for the Behavioral Health Unit (BHU). As part of my equipment specification project, I worked with the facility manager and kitchen staff to dust off an industrial Berkel sealer machine, then researched and authored a user manual. I ended up learning how to program the sealer, set it up in the kitchen and demonstrated how to use it to the staff. At Kettering Public Schools, I worked with the Food Service Director and my fellow intern, Allison Benjamin, to design and implement a Space Theme Meal, with vegetarian options. It was a huge hit and my favorite project; students all wore space themed T-shirts and food sales hit a record high for the day. This project also provided me opportunity to reach back to my aerospace career and educational advocacy for space. I also designed and implemented a new electronic invoicing system to automate input to the school financial reporting system. My final project was to design and implement a food allergen awareness survey, educational campaign and informational flyer.

Theme Meal
This was the first major project of my internship, and I was lucky enough to have a preceptor who supported the vision of a Space meal – enabling me to blend my past with present career. Sales records were broken AND the kids and staff all had a great day AND we introduced a new vegetarian entree. The feedback was so positive that the Director decided to initiate theme meals district wide.
Food Supplier Invoicing
The Kettering School Food Service team operates as a profit loss but has limited administrative staff. This project brought forward some of the skills from my previous career to quickly add value to the team.
Allergen Food Safety
The most fun part of this project was that our Food Service Director motivated her team to participate. So not only did we get survey responses, we went out and piloted the training in person at three schools.
Hobart Automated Dish Machine
This project was a quick Return on Investment (ROI) analysis that I conducted for the Kettering School District Director of Foodservice to help her decide whether to invest in a Hobart Automated Dish Machine for the High School. As part of the analysis, we shadowed the school Kitchen Manager, counted the number of trays used during each meal, and measured the amount of time it took to manually wash trays. The resulting analysis showed there was a cost savings to purchase the machine, with ROI achieved in about 1.5 years and a 72% savings in water usage.

Plate Waste
Who thought counting trash could be so fun? The school system uses a self-serve choose method where students can pick their favorite sides. Our “customers” were very energetic and enjoyed their cheesy bread lunch and surprisingly ate their green beans.
Menu Design
Tackling behavior health menus was a big task given all of the constrains of packaging and eating utensils. It was particularly rewarding to factor in two new culturally diverse menu items – Tzatziki and Green Chile Stew.
Berkel Sealer
It was very rewarding to see a piece of forgotten equipment come back to life due to the research I did to investigate how to use the machine, program it and write a comprehensive user manual.
