Red or Green? Christmas Challenge

Anyone who is familiar with authentic New Mexican food knows that when you order your food “Christmas” it means to put both red and green chile on top! Can you eat at least one red or green vegetable every day this month? Eating a variety of different colored vegetables will give you a mix of vitamins, minerals and phytonutrients that help your body fight infections and prevent disease. 

Download our December 2025 calendar, print it off and track your progress!  Mix in any Red or Green vegetable – but the goal is to eat at least one red or green vegetable every day in December.

 To help give you some ideas to jump start your month – here’s a list to pick from.

Red Vegetables

  1. Red bell pepper
  2. Red chili pepper
  3. Red cabbage
  4. Red onion
  5. Red potato
  6. Red radish
  7. Red beet (beetroot)
  8. Red lettuce (e.g., red leaf lettuce, red romaine)
  9. Red Swiss chard (with red stems and veins)
  10. Tomato (technically fruit)

Green Vegetables

  1. Green bell pepper
  2. Green chili pepper
  3. Leafy greens: Spinach, Kale, Lettuce, Chard, Arugula
  4. Cabbage, Bok Choy and Brussel sprouts
  5. Collard, Turnip and Mustard greens
  6. Broccoli and Broccolini
  7. Green beans, snap peas, young peas
  8. Edamame (soybeans)
  9. Cucumber
  10. Zucchini
  11. Okra
  12. Asparagus
  13. Celery
  14. Leeks
