Future events...
July 16-19, 2026 – National PKU Alliance Conference in Chicago, IL. This year I will be attending the VIP reception and main event sessions. Looking forward to seeing my friends there!
October 2026 - Annual Nutrition and Dietetics 3 day conference in San Antonio, Texas.
Genetic Metabolic Dietitian International Conference - April 24-27, 2026
Writing about this conference is a bit tricky because some of the people who will read this are already experts in Inherited Inborn Errors of Metabolism (IEMs) but a majority of you are brand new to this topic.
How to strike a balance? Start with the science, and everyone hang in there, this is worth the read.
Starting from the top – human metabolism is the process by which our body uses and creates energy. Simple right? Not so fast.
Let’s start with protein.
In order for your body to make energy, create enzymes, handle waste, build neurotransmitters, create hormones, regulate immune function, transport nutrients, maintain acid/base balance and basically every single function of life comes back to proteins.
Protein is made up of individual amino acids. There are 20 common amino acids that form together in different configurations to make strands – peptides. The Peptides sting together to make proteins.
I’m simplifying things here, but many IEMs are due to a missing enzyme or biochemical process related to amino acids. Nutrition care is critical because many of these conditions are treated with specialized diets, foods and formulas that work around the missing enzyme. Today, we know more about human metabolism and the genetic causes of IEM’s – but we are still learning!
We are retroactively testing people with underlying conditions like urea cycle disorders (where ammonia builds up to toxic levels) and lysosomal disorders and glycogen storage disorders (imbalance or inability to produce/store sugar).
Enter the conference. Thank you for hanging in there. These conditions are managed by Metabolic Dietitian’s that specialize in the complex nutrition care for these patient populations. This is not easy work. Care of these individuals requires careful monitoring and patient education.
Of all of the IEMs, PKU is considered one of the most treatable with the best patient outcomes. Some of the other conditions are more complex and have a less favorable profile. Almost all are diagnosed in childhood, and through newborn screening.
Where am I going with all of this? Dietitians make a fraction of the salary of physician assistants, nurse practitioners and doctors. The general public is confused by what we do, and the training we require. Spending 3 days working, learning and engaging with this community was fantastic.
What I learned will be reflected in numerous ways going forward, the topics I write about, and the way I care for every single person in my private practice. Thanks for hanging in there – and if you have any questions about all of this, please feel free to reach out.
Outdoor Recreation: Winter Nutrition Discussion - February 23, 2026
In an event at the Colorado Mountain College campus in Leadville Colorado Karen held an interactive session with community members interested in how to properly fuel (before, during, after) and recover for outdoor activities in the wintertime at high altitudes. The discussion covered various topics including the optimal type of macronutrients based on the type of exercise and the importance of proper hydration. Examples of healthy and inexpensive snacks for nutrition were discussed (and sampled!) along with a group activity analyzing the best type of foods to consume before, during and after both aerobic and anaerobic activities.
University of Northern Colorado: Metabolic Disorders Discussion with Healthcare Students - February 18, 2026
In an event sponsored by Lisa Caldwell, Faculty Member and Senior Lecturer for the Distance Dietetic Program at the University of Northern Colorado (UNCO) Karen spoke to a group of 12 Maternal and Child Nutrition college seniors about her experience with metabolic disorders, specifically Phenylketonuria (PKU). Karen covered a variety of topics including the basics of metabolic disorders (adding in a little biochemistry to boot!), the importance of newborn screening and related maternal considerations. She provided students taste samples of a low protein formula for the treatment of those with PKU and discussed mechanisms of new treatments for the disorder. This interactive discussion on how to provide nutrients to specialized populations was a great learning experience for this group of UNCO seniors.
CAND: Southern Colorado Networking Event - November 14, 2025
Thanks to a sponsored networking event by the Colorado Academy of Nutrition and Dietetics, Karen had a chance to view state of the art Sports Nutrition labs in Colorado Springs - the epicenter of Olympic Training. The brand new Hybl Sports Medicine and Performance Center has an Altitude Chamber that can be used to simulate the effects of intense exercise on the human body at high elevations and humidity. She also toured the Anatomy and Physiology lab that is used to teach students how to perform dissections on humans cadavers.
Karen Casey Spotlight: PCORI Healthcare Horizon Scanning System - October 24, 2025
As a reviewer for the Patient-Centered Outcomes Research Institute (PCORI) Healthcare Horizon Scanning System, Karen was recognized for her valuable insights that help medical research analysts explore the potential impact of emerging treatments for rare diseases. Her role as a PCORI Horizon Scanning Stakeholder Reviewer reflects her dedication to integrating caregiver experience into healthcare research.
Food Nutrition Conference & Expo - October 11-14, 2025
In a quick trip to Nashville, TN, Karen participated in the annual Academy of Nutrition and Dietetics conference. Two of the biggest highlights were attending the food EXPO and the networking events. Nutrition care is a rapidly evolving field which is why it is critical to stay connected to the latest research and nutrition science.
Colorado For the Health of It! - October 15, 2025
Karen was a guest speaker at the Colorado For the Health of It! Book club discussing some of the PRO’s and CONs of Peter Attia’s NY Bestseller - Outlive.  She provided a thoughtful and comprehensive analysis of Mr. Attia’s proposed solutions for living a long life, pointing out a few surprises and fallacies along the way.
